Making things mini often makes them more appealing to kids. Making things in the shape of mini-cupcakes also makes them an easier sell to the munchkins. We call these egg cupcakes around here and that gets Ria all excited about them and she gobbles these up.
She also loves them because this recipe is by her favorite “cooker” Jamie Oliver. She once said to me, “Jamie Oliver – he’s the greatest cooker. I want him to come to our house. We have an extra room for him.” Maybe I should stop watching the Food Network with her. I should at least tell her that he is a celebrity and just because we watch his show regularly, it does not make him our personal friend. I think she fancies him also because on his Jamie at Home show he has a vast vegetable garden that she has often expressed a desire to own herself. I have to admit, she does have good taste – Jamie is one of my favorite “cookers” too.
These cupcakes are fun and easy to make with the little ones. They work great for brunch, picnics, school lunches and a post-school snack. You can fancy them up with any fillings you and your kids like (ham, cheese, spinach, asparagus etc.). It’s always helpful to have a small stash of these in the fridge for when hunger strikes.
Jamie Oliver’s Mini Frittatas
Makes 12
Ingredients
6 eggs
2 tbsp milk or heavy cream
Preferred filing – we used cheese and diced ham
salt and pepper to taste
Method
- Grease a cupcake tin and preheat over to 350F
- In a measuring cup, beat the eggs and milk or cream
- Divide the egg mixture equally between the holes.
- Add your preferred filling
- Bake for 12-15 minutes, until crisp and golden
- Leave to cool slightly before removing from tray

in regards to mini frittats ….can these be made in advance and then Reheated to be served for brunch the following day?
Have not tried it….not sure eggs reheat well…
Yes! These are great left over. Just nuke them for 30 seconds and you got breakfast on the run. These are a staple in my weekly routine. I actually make them with two eggs and 6 egg whites to lighten up the fat and cholesterol.

I was wondering where the flour was for mini cupcakes? This is a clever way to get Protein into the kid…except my kids will be standing ready with chocolate icing since we are making “cupcakes”
Maybe you convince them that cheese is icing! But your monkeys are too smart for that!

Sometimes with the kids the “name” of what they are eating helps them eat it…..

I make something similar to this with chopped spinach. Great way to get your kids to eat spinach! I’m sure the ham is a delicious filling, too.
Thanks for the idea. I’m printing out the recipe as I write this. Funny that I just had a very similar breakfasty thing from Specialty’s this morning, but think of the money I’d save if I just made them at home!
I was wondering if these could be frozen and then microwaved in the morning for quick make-ahead alternatives to unhealthy frozen breakfast sandwiches.
hhmmmm…I am uncertain about freezing eggs and then thawing them out but it might be worth the experiment. 🙂
I have made mini-quiches from a Pampered Chef recipe and after they are baked, the egg filling in these freeze and microwave very nicely. Fast breakfast for my kids when they were young if we were running late and now I keep them on hand for my grandchildren.
