Three 3-Ingredient Wonders

The idea of making anything with just 3 ingredients (excluding basics like salt, pepper, oil etc.) is an alien concept to someone who cooks primarily Asian food.  I use 5-10 spices in almost each dish without even thinking about it!  However, if you use the best ingredients and let the grocery store do some of the work for you (for example, store bought puff pastry & granola), you can put together a rather impressive meal with minimal effort, mess and ingredients.

Inspired by Real Simple Magazine’s 3-Ingredient Recipes, I put together a three course summer meal that would please the pickiest of eaters (my husband!).  It would make an elegant dinner party and give people the impression that you spent the whole day in the kitchen.  Here’s the menu:

Flaky Tomato & Gruyere Tart

Chicken with Lemons & Olives (with a simple, optional side salad & bread rolls)

Blackberry Granola Crisp

Chilled White Wine 🙂

Flaky Tomato & Gruyere Tart


  • all-purpose flour, for the work surface
  • 1/2 sheet puff pastry (1/4 of a 17.3-ounce package)
  • 1 cup grape or cherry tomatoes, halved
  • 1 cup grated gruyere cheesse (you can use mozzerella)
  • 1 tablespoon olive oil
  • kosher salt and black pepper


  1. Heat oven to 400° F. On a lightly floured surface, roll the puff pastry into a 9-by-6-inch rectangle. Place on a parchment-lined baking sheet and refrigerate until firm, at least 30 minutes.
  2. Prick the puff pastry all over with a fork and top with the tomatoes and gruyere. Drizzle with the oil and season with ½ teaspoon salt and ¼ teaspoon pepper. Bake until golden brown and cooked through, 20 to 25 minutes. Cut into pieces before serving.
Chicken with Lemons & Olives
  • 2 1/2 to 3 pounds bone-in, skin-on chicken pieces (I used chicken breasts)
  • kosher salt and black pepper
  • 2 teaspoons olive oil
  • 1 lemon, thinly sliced (I used preserved lemons)
  • 1/2 cup pitted kalamata olives


  1. Heat oven to 400° F. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Working in batches if necessary, cook the chicken until golden brown, 5 to 6 minutes per side.
  3. Transfer the chicken to a rimmed baking sheet and bake until cooked through, 15 to 20 minutes. To the skillet, add the (preserved) lemon slices and cook until golden, 1 to 2 minutes per side. Mix in the olives and serve over the chicken.

Blackberry-Granola Crisp

  • 5 cups blackberries (1 1/2 pounds) (We used some foraged Presidio berries)
  • 1/4 cup light brown sugar
  • 1/4 teaspoon kosher salt
  • 2 cups granola (store-bought or homemade if you have some lying around)
  • 4 tablespoons unsalted butter, softened


  1. Heat oven to 350° F. In a medium bowl, toss together the blackberries, sugar, and salt. Transfer to a shallow 2-quart baking dish.
  2. In another medium bowl, using your hands, mix the granola with the butter until large clumps form; scatter over the blackberries. Bake until the blackberries are bubbling, 20 to 30 minutes.
